Peanut Butter Cookies

YIELD: 36 cookies

PREP TIME: 10 to 15 minutes

BAKING TIME: 10 to 12 minutes

INGREDIENTS

1/2 cup (125 mL) butter
1/2 cup (125 mL) brown sugar
1/2 cup (125 mL) white sugar
3/4 cup (175 mL) smooth peanut butter
2 eggs, beaten
1/2 teaspoon (2 mL) vanilla


1 cup (250 mL) unbleached all-purpose flour
3/4 cup (175 mL) whole grain flour or unbleached all-purpose flour
1 teaspoon (5 mL) baking soda
1/2  teaspoon (2 mL) salt

DIRECTIONS

1. In a mixer combine butter and sugars. Add peanut butter and blend until smooth. Add eggs and vanilla and blend thoroughly.

2.  In a separate bowl mix flours, baking soda and salt. Mix dry into wet and blend lightly. Roll into balls and place on parchment paper lined cookie tray. Flatten with large fork, creating a crisscross pattern on the cookie.

3. Preheat oven to 375°F (190°C). Bake for 10 to 12 minutes.


CLARA'S TIPS

1. You can substitute vegan spread (Earth Balance®) for butter or margarine.

2. Flatten cookie with a large fork, creating the distinctive crisscross pattern illustrated above. Remember to dip the fork from time to time in a cup of clear water.
