Frozen Treats

“This frozen treat recipe has become a favourite of mine. Making these treats requires little time and you can adjust the ingredients, to your liking.” - Theresa 

YIELD:  4 Frozen Treats 

PREP TIME: 5 to 10 minutes

FREEZING TIME: 2 hours required 

INGREDIENTS

Apricot, Peach & Banana:

1/2 cup (125 mL) coconut yogurt (unsweetened)
1/4 cup (60mL) fresh or  frozen peaches
1/2 small apricot
1/4 small banana 
1 tablespoon (15 mL) almond or coconut milk
1/2 Medjool date (pit removed)
1 teaspoon (5 mL) maple syrup or honey (optional)


Pineapple, Orange & Lemon:

1/2 cup (125 mL) crushed pineapple 
1/2 orange, freshly squeezed
1 teaspoon (5 mL) lemon juice
1/4 cup (60mL) filtered water 
1/2 Medjool date (pit removed)
1 or 2 teaspoon (5 to 10 mL) of maple syrup or honey 

DIRECTIONS

1. Blend all ingredients together and set aside.

2. Insert popsicle stick into plastic mold. Pour mixture into molds and cover. Stack in freezer for 2 to 3 hours until frozen.

3. Each container holds 1/4 cup (60 mL) of liquid.

THERESA’S TIPS

1. Experiment with freezing green drinks, protein drinks or vegetable/fruit drinks. 

2. I  often substitute different combinations of fruit when choice is limited.

3. I like to use stackable popsicle molds. I choose a product called Lékué: they’re small and stack easily in the freezer.
